Fruit Glacé

Yield 1 pint strawberries and 2 oranges

  • 1 cup sugar
  • 1 cup light corn syrup
  • 1/3 cup water
  • 1 pint strawberries, washed with hulls intact
  • 2 oranges, peeled, sectioned, and seeded

How to Make It

  1. Combine sugar, syrup, and water in a small saucepan. Cook over medium heat, stirring constantly, until sugar dissolves. Cover and continue to cook over medium heat 2 to 3 minutes to wash down sugar crystals from sides of pan. Uncover and cook, without stirring, until mixture reaches soft crack stage (280°).

  2. Remove from heat, and place pan over hot water. Working rapidly, dip fruit into hot syrup, using a fork. Place fruit on a buttered baking sheet to harden. Let cool. Serve within 2 hours.
