Herby Frittata with Vegetables and Goat Cheese

    Good and easy recipe. Reheats OK, but better fresh. Split into 6 portions instead and served each with a croissant roll.

    Easy and delicious. I added some oregano and a half of a frozen cube of garlic I also used herbed goat cheese. This made for a very nice lunch. I would definitely make this again.

    Worthy of a Special Occasion

    This was a great quick dinner this week. Husband won't touch anything with green in it so I've been reheating each quarter wrapped in parchment paper in the microwave for lunch and it works practically as good as freshly broiled for me. I eat it with a crispbread but it would make a quick dinner with a fresh salad & some crusty bread.

    This was easy and delicious. Didn't have chives or fresh dill, so substituted green onions and dried dill. Not as good, I'm sure. I had to add some sliced mushrooms sauteed in some cooking spray done while the asparagus was in the microwave. DD doesn't like goat cheese, so I sprinkled some mozzarella on her portion. That said, quality soft goat cheese is what makes this dish special.
