Fried Zucchini Straws

    We were looking for something different to do with our garden zucchini. I had not tried panko on zucchini fries, nor Parmesan. These were great! Stick with thin slices vs. thicker. The process was a bit lengthy, food processor and all, vs other fries I have made, but they were a good change. We made a little milky ranch with a tad of dill to use as a dip.

    This recipe sounds delicious, however as written it is full of omissions. The third ingredient is 1/2 tsp of what? The omissions in step 4 are pretty self explanatory. Just pointing it out so maybe corrections can be made..

    I had a bunch of yellow squash and this crispy breading worked perfectly. I just cut the squash in circles instead of strips and made a mayo/ketchup/BBQ sauce dipping sauce to go with it... yum!

    These are yummy. The breading mix is very good and would be tasty with other vegetables, too. I will make these often and will share the recipe with others.
