Yield 8 servings

  • 1 large bunch (about 5 pounds) turnip greens
  • 1/3 pound salt pork, washed and diced
  • 1 cup water
  • 1/2 cup coarsely chopped onion
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

How to Make It

  1. Cut off and discard tough stems and discolored leaves from greens. Wash greens thoroughly and drain.

  2. Cook salt pork in a large Dutch oven over medium heat, stirring frequently, until crisp and brown.

  3. Add water, onion, sugar, salt, pepper, and greens; bring to a boil. Reduce heat and simmer, uncovered, for 2 minutes. Cover and simmer 45 minutes or until tender.
