Fresh Tomato Salsa
This recipe goes with Okra-Shrimp Beignets
Yield: about 2 cups
Ingredients
- 4 large plum tomatoes, seeded and chopped (about 2 cups)
- 1/4 cup chopped fresh cilantro
- 1 jalapeño pepper, seeded and finely diced
- 3 tablespoons finely diced red onion
- 2 1/2 tablespoons fresh lime juice
- 1 tablespoon extra virgin olive oil
- Salt and pepper to taste
Preparation
- Stir together tomatoes, cilantro, jalapeño pepper, red onion, lime juice, olive oil, and salt and pepper to taste.
