Ingredients

  • 4 large plum tomatoes, seeded and chopped (about 2 cups)
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño pepper, seeded and finely diced
  • 3 tablespoons finely diced red onion
  • 2 1/2 tablespoons fresh lime juice
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Stir together tomatoes, cilantro, jalapeño pepper, red onion, lime juice, olive oil, and salt and pepper to taste.
