Fresh Tomato Salsa



about 2 cups

4 large plum tomatoes, seeded and chopped (about 2 cups)
1/4 cup chopped fresh cilantro
1 jalapeño pepper, seeded and finely diced
3 tablespoons finely diced red onion
2 1/2 tablespoons fresh lime juice
1 tablespoon extra virgin olive oil
Salt and pepper to taste


Stir together tomatoes, cilantro, jalapeño pepper, red onion, lime juice, olive oil, and salt and pepper to taste.
