Ingredients

  • 1 (8-ounce) package penne
  • 4 cups chopped seeded tomato
  • 1/2 cup chopped pitted kalamata olives
  • 1/2 cup shredded Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 2 tablespoons olive oil
  • 1 tablespoon pine nuts, toasted
  • 1 tablespoon balsamic vinegar
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon crushed red pepper

Preparation

  1. 1. Cook pasta according to package directions (omit salt and fat). Drain.
  2. 2. Combine pasta and remaining ingredients, tossing to coat.
