Delicious! Additional hints: Before you cut the lemons, roll them on the counter, applying pressure, until they're soft. A lemon juicer makes quick work of the 'manual labor'. Great recipe. I will make this again and again and again!
- 1 1/2 cups sugar
- 1/2 cup boiling water
- 1 tablespoon grated lemon rind
- 1 1/2 cups fresh lemon juice (8 large lemons)
- 5 cups water
- Stir together sugar and 1/2 cup boiling water until sugar dissolves. Stir in lemon rind, lemon juice, and 5 cups water. Chill. Serve over ice.
