Ingredients

  • 1 (10-oz.) package plain couscous
  • 1 1/2 cups frozen sweet green peas, thawed
  • 3/4 cup crumbled feta cheese
  • 1/3 cup sliced green onions
  • 1/4 cup chopped fresh mint
  • 2 teaspoons lemon zest
  • 3/4 teaspoon freshly ground pepper
  • Salt to taste

Preparation

Prepare couscous according to package directions. Stir in peas, feta cheese, green onions, mint, lemon zest, pepper, and salt to taste.
