Ingredients

  • 6 ounces cherry tomatoes, quartered
  • 1/2 cup finely chopped yellow bell pepper
  • 2 tablespoons capers, drained
  • 1 tablespoon cider vinegar
  • 1 1/2 teaspoons extravirgin olive oil
  • 3/4 teaspoon dried basil
  • 1/8 teaspoon crushed red pepper
  • 1 garlic clove, minced
  • 4 (6-ounce) skinless, boneless chicken breast halves
  • Cooking spray
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation

  1. 1. Preheat broiler.
  2. 2. Combine first 8 ingredients in a bowl; cover and chill until ready to serve.
  3. 3. Place chicken on a broiler pan coated with cooking spray; sprinkle with salt and black pepper. Broil 5 minutes on each side or until done. Serve tomato mixture over chicken.
