Ingredients

  • 1 large tomato, peeled, seeded, and chopped
  • 2 1/2 tablespoons diced purple onion
  • 1 jalapeño pepper, seeded and minced
  • 1 1/2 teaspoons chopped fresh cilantro
  • 1 garlic clove, minced
  • 1/2 teaspoon red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Preparation

  1. Stir together all ingredients; chill 2 hours.
