This makes a syrup with a pure peach flavor. I left the skin on my peaches and crushed them with my hands. I added a vanilla bean to my simple syrup and used Whey Low in place of regular sugar. My peaches were very juicy, so I let the whole mixture simmer for a bit to reduce. I had some in my ginger-peach tea last night, and it's great! It's going to make a great homemade peach soda, too. If you have some overripe peaches and you need a good use for them, I highly recommend this recipe.
