Fresh Mozzarella-Tomato-Basil Salad

1/2 pound fresh mozzarella cheese, drained
2 large red tomatoes, sliced
2 large yellow tomatoes
1 cup pear tomatoes, cut in half
1/2 teaspoon salt
3 tablespoons extra-virgin olive oil
Freshly ground pepper
1/2 cup shredded or chopped fresh basil
Garnish: fresh basil sprig


Slice cheese in 1/4-inch slices. Alternate tomato and cheese slices on a platter; add pear tomato halves, and sprinkle with salt. Drizzle with olive oil. Cover and chill 4 hours. Just before serving, sprinkle with freshly ground pepper and basil. Top with a sprig of basil.
