Fresh Lemon Vinaigrette

  • 3 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sugar
  • 1 large garlic clove, pressed
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 7 tablespoons olive oil


  1. Whisk together lemon juice, Dijon mustard, sugar, garlic, salt, and pepper. Add olive oil in a slow, steady stream, whisking constantly, until blended. Serve immediately, or store in refrigerator up to 1 week. Bring to room temperature, and whisk until blended before serving.
