Fresh Lemon Vinaigrette
Fresh Lemon Vinaigrette is the secret ingredient that binds the flavors and fresh produce in Apple-Cabbage Slaw.
This recipe goes with Apple-Cabbage Slaw
Yield: Makes about 1/2 cup
- 3 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon sugar
- 1 large garlic clove, pressed
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 7 tablespoons olive oil
- Whisk together lemon juice, Dijon mustard, sugar, garlic, salt, and pepper. Add olive oil in a slow, steady stream, whisking constantly, until blended. Serve immediately, or store in refrigerator up to 1 week. Bring to room temperature, and whisk until blended before serving.
