Makes about 1/2 cup
3 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon sugar
1 large garlic clove, pressed
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
7 tablespoons olive oil
Whisk together lemon juice, Dijon mustard, sugar, garlic, salt, and pepper. Add olive oil in a slow, steady stream, whisking constantly, until blended. Serve immediately, or store in refrigerator up to 1 week. Bring to room temperature, and whisk until blended before serving.
