1 medium egg
1 tablespoon chopped fresh herbs, such as parsley, dill, and chervil
Salt and pepper
Olive oil spray
A handful of baby spinach leaves, to serve
How to Make It
Beat the egg with the chopped herbs and a pinch of salt and pepper.
Spray a small nonstick frying pan with 2-3 squirts of oil, and place over medium-high heat. Pour the egg mixture into the pan, swirling gently with a fork or wooden spoon. Cook for 1–2 minutes, until the egg is just set, and then slide it on to a warmed plate. Serve immediately with a handful of baby spinach.
