Fresh Fruit with Tangy Dressing

Ingredients

  • 4 cups sliced banana (about 8 medium)
  • 4 cups cubed cantaloupe
  • 1 medium avocado, peeled and sliced
  • Lettuce leaves
  • 1/3 cup sugar
  • 1 tablespoon vegetable oil
  • 1/3 cup lemon juice
  • 1/4 cup water
  • 1 teaspoon celery seeds
  • 1 teaspoon dry mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon salt

Preparation

Arrange 1/2 cup banana, 1/2 cup cantaloupe, and one-eighth of avocado on each of 8 lettuce-lined salad plates.

Place sugar and next 7 ingredients (sugar through salt) in a blender; process until well-blended. Drizzle 2 tablespoons dressing over each salad.
