Fresh Fruit Salad with Celery-Poppy Seed Dressing
No time to cut up fruit? Stop by the deli or supermarket salad bar Saturday night. Toss the fruit with lemon juice to keep it looking fresh.
Yield: 12 to 15 servings
Ingredients
- 2/3 cup sugar
- 1/3 cup honey
- 5 tablespoons white vinegar
- 1 tablespoon fresh lemon juice
- 1 teaspoon dry mustard
- 1 teaspoon paprika
- 1 teaspoon celery seed
- 1/4 teaspoon salt
- 1 cup vegetable oil, chilled
- 8 cups assorted fruit (melon cubes, strawberry halves, pineapple chunks)
Preparation
- Process first 8 ingredients in a blender until smooth, stopping to scrape down sides. With blender running, add oil in a slow, steady stream. Chill 8 hours, if desired. Serve with assorted fruit.
