Fresh Corn and Avocado Salad

Fresh, pretty, easy and delicious!

Really great! I added a little "frog eye" pasta to make it a "heavier" side dish with the salmon and roasted carrots I served.

Gloriously fresh ingredients make this an amazing salad. I'm not sure I won't add a squirt of lime the next time just for fun.

If you have access to great fresh corn and sun-ripened heirloom tomatoes (particular the darker varieties) this is an outstanding season dish. We were gobbling it down without the dressing so I left it on the side. Making it again tomorrow.

Very tasty, light, easy to make salad. Perfect for warm summer evenings or taking to a friend's barbeque. The proportions of the ingredients are close to just right, although, I would use another half of an avocado next time.

This salad is delicious! My friend made it for a luncheon and I couldn't stop eating it. It's so flavorful and refreshing. The fresh corn is definately a must.

I was really excited about this recipe and rightly so! It is great! I used white wine Vinegar instead of the champagne because my grocery didn't have it. turned out just fine. I would also suggest adding the salt last and doing to your taste.

This was delicious! We substituted cilantro for the basil tho and roasted the corn on the grill first. We ate it as a side dish, but would be delicious on chips.

I was having a large gathering for Easter (14 People). I had to find a Veggie Dish that everyone would like. I have some picky eaters in the family. This dish was a hit...It was light and fresh. I loved the Champagne Vinegar.. I kept adding more. Its not strong or over powering. I also added the avocado just before serving. I was afraid they would turn dark..This dish was fun to make and eat....It's a thumbs up in my house.

This is very yummy and something a little different than the usual red potato salad I always bring to a barbecue.

This is AMAZING! I've made it a couple of times and wouldn't change a thing.

I LOVE this! I would recommend using slightly less vinaigrette. To me, it was a little wet at first. I also think it's even better the second day. From now on, I'll make this ahead and let it sit in the fridge for several hours before digging in. Yum, yum, YUM!

I love this salad. It is super easy and the vinaigrette is perfect. Sometimes I add black beans and make it a meal. Fresh, light and tasty.
