Fredericksburg Orange Doughnuts

Yield about 1 1/2 dozen

  • 1/4 cup butter or margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tablespoon grated orange rind
  • 3 tablespoons orange juice
  • 5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • Lard or shortening
  • Additional sugar

How to Make It

  1. Cream butter in a large mixing bowl; gradually add 1 cup sugar, beating well. Add eggs, rind, and juice; beat well.

  2. Sift together flour, baking powder, and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture.

  3. Place dough on a floured surface; roll to 1/4-inch thickness. Cut dough with a floured doughnut cutter.

  4. Drop doughnuts 3 to 4 at a time into deep, hot oil (375°). Cook 1 minute or until golden brown on one side; turn and cook 1 minute on other side. Drain well. Roll doughnuts in additional sugar; serve warm.
