Focaccia Pastrami Sandwich

For a hot sandwich, bake the focaccia loaf halves in a 350° oven for 5 minutes or until toasted. Look for focaccia in the bakery section of your supermarket.

Ingredients

  • 3 tablespoons fat-free mayonnaise
  • 2 tablespoons stone-ground mustard
  • 1 (8-inch) round focaccia loaf (about 9 ounces)
  • 1 1/2 cups trimmed watercress
  • 3/4 cup sliced bottled roasted red bell peppers
  • 8 ounces turkey pastrami

How to Make It

  1. Combine mayonnaise and mustard. Cut loaf in half horizontally, and spread mayonnaise mixture evenly over cut sides of bread. Arrange watercress, peppers, and pastrami over bottom half of loaf; top with remaining half. Cut loaf into 4 wedges.
