"Floribbean" Grouper with Red Pepper-Papaya Jam

    I was so excited to try this after reading all of the reviews, but was very disappointed. The fish itself had very little flavor, the breading was not good and the "jam" was really weird in both texture and taste. I followed the recipe exactly.

    Turned out perfectly . The fish was good enough to eat without the jam, but the jam was worth the effort and did add to the overall flavor of the dish.

    My husband and I are always looking for healthy fresh fish recipes. I have always loved fruit salsa to keep it light and flavorful. I added a few additions to the salsa such as frozen mango, cilantro, and green onions for color and made it ahead of time. The cashew coating proportions did not make enough and for two large filets I would make 4 times as much to be sure they were well coated. The slightly salty cashews were a nice contrast to the sweet papaya salsa. This is definitely a keeper and something we will make often in the future. I used cod filets, very mild, and delicious. It took a little more work than anticipated, but definitely worth the trouble. Thanks for a great recipe.
