Ingredients
- 2 stalks celery, chopped
- 2 carrots, chopped
- 2 garlic cloves, chopped
- 3 tablespoons olive oil
- 1 cup milk
- 1 10-ounce box frozen chopped spinach, thawed and squeezed
- 1/2 cup peas
- 1/2 cup grated Parmesan
- 3 eggs
- 1/2 cup parsley, chopped
- 2 tablespoons Dijon mustard
- 1 teaspoon salt
- 2 6-ounce halibut fillets, flaked, cooked or raw
- 2 pounds packaged refrigerated prepared mashed potatoes (such as Dinerà fs Choice)
- 2 scallions, sliced

Preparation
- Saute celery, carrots, and garlic in 3 tablespoons olive oil for 5 minutes. Remove from heat. Stir in milk, spinach, peas, Parmesan, eggs, parsley, Dijon mustard, salt, and flaked halibut. Pour into a 2-quart baking dish. Mix mashed potatoes with
- scallions and spread on top of the pie. Bake 40 minutes at 400° F.
