Fish and Tomato Stew

Fish and Tomato Stew

  • Yield: 4 servings


  • 1 medium onion or leek, chopped
  • 2 tsp minced garlic
  • 1 large stalk celery
  • e1 tbsp fennel seeds, crushed
  • 1 tsp crushed red pepper flakes
  • 1 28 oz can tomato
  • 1 cup white wine
  • 2 cups fish stock, or chicken stock
  • 1 lb fresh or frozen fish fillets, shrimp, and scallops
  • 1/4 cup chopped parsley


in a nonstick saucepan, heat oil over med heat; cook onion and garlic until softened, about 5 mins

add celery, fennel seeds, red paper flakes, tomatoes, wine, and fish stock; bring to boil. reduce heat and simmer for 5 mins

ad fish and cook until opaque. add parsley and season to taste with S and P. DONE
