Fingerling Potato Salad with Gremolata Dressing

    Made to recipe using multi-color potatoes. Liked the fresh flavors. Served with CL's cheddar burgers & red onion jam -- probably would be better paired with simply grilled chicken or fish.

    A favorite in our household, this is the perfect summer side dish. If you like piccata type flavors, then this will be a hit. I probably added additional garlic because we are obsessed with it. I have also purchased the white only fingerling potatoes that you can steam in the microwave and this works just as well. Step aside macaroni salad, here comes fingerling!

    - I used this recipe but substituted Sesame Oil for the OO and tossed the potatoes in the marinade before baking them on a cookie sheet. It was very good. - I also tried it by steaming the potatoes first, then tossing them in the above marinade, then broiling them for 10 minutes. It was good too.

    Wow! Potato salad is usually quick and easy but before this recipe I'd never call it light and refreshing! I made it exactly as written except that I used all colors of fingerlings. It made a pretty dish, nice enough for special dinners and I plan to serve it again this Easter Sunday. It's also perfect for summer cookouts - I served mine w/ grilled pork tenderloin, sliced tomatoes and sauteed squash and onions. Got rave reviews! FYI, Costo has fingerilngs in a 5# bag!

    Perfect dish for a summer BBQ or buffet and great dish to bring to a potluck. I substituted capers with fresh basil pieces and added a bit more garlic and lemon juice than instructed. When traveling, prepare the dressing at home and apply it to the potatoes just before serving. Even my mom, who has a scared, bland palate, loves this. I now make this dish by popular demand.

    This salad is FABULOUS! I have made it for years now, ever since it was in the magazine. It is great with grilled chicken or fish or anything else for that matter! I need to make this more often! Great one again CL!

    Loved this simple potato dish! Was great with tri-colored fingerlings, but I'll also try it with small red potatoes in the future.
