We try to keep open minds when trying new combos but this was no good, sorry CL. The fig, mint, lettuce, onion & cheese were great together. The tomato, onion, cheese, mint & lettuce were fine. All combined, it was like two leftover salads mixed together. For us it probably would have been better with a creamier cheese, maybe goat? or a sweeter dressing?

We greatly enjoy the combination of flavors but be sure that you use the freshest farmers market ingredients: sweet, ripe figs, vidalia onions, and tomatoes. The dressing was suble and did not take away from the already wonderful flavors of the fresh vegetables and tomato. I do not like the flavor of mint and omitted it. I served this as a vegetarian entree and have added grilled shrimp for the meat eaters in our family. Give this a try; it's easy and delicious!
