Ingredients

  • 1 (8.8-ounce) pouch microwaveable cooked brown rice (such as Uncle Ben's Ready Rice)
  • 1 tablespoon olive oil
  • 1 cup matchstick-cut carrots
  • 1 tablespoon minced peeled fresh ginger
  • 2 garlic cloves, minced
  • 1/2 cup small dried figs, quartered

Preparation

  1. 1. Heat rice according to package directions; keep warm.
  2. 2. While rice cooks, heat oil in a large nonstick skillet over medium-high heat; add carrots, ginger, and garlic. Sauté 3 minutes or until browned. Add figs; sauté 2 minutes or until hot. Remove from heat; stir in rice. Serve immediately.
