Ingredients
- 1 cup(s) cornmeal
- 1 cup(s) buttermilk
- 8 ounce(s) creamed-style corn
- 2 jalapeno peppers chopped1/2
- 1/2 teaspoon(s) salt
- 3/4 teaspoon(s) baking soda
- 2 eggs beaten
- 1 onion chopped
- 1/4 cup(s) oil
- 1 cup(s) cheddar cheese divided
Preparation
- Combine first 8 ingredients; set aside. Heal oil in 8-10 inch cast iron skillet; pour in half the batter. Sprinkle with half the cheese; pour remaininng batter over top. Sprinkle with remaining cheese. Bake at 400 degrees for 30 minutes
