  • 1 cup(s) cornmeal
  • 1 cup(s) buttermilk
  • 8 ounce(s) creamed-style corn
  • 2 jalapeno peppers chopped1/2
  • 1/2 teaspoon(s) salt
  • 3/4 teaspoon(s) baking soda
  • 2 eggs beaten
  • 1 onion chopped
  • 1/4 cup(s) oil
  • 1 cup(s) cheddar cheese divided


  1. Combine first 8 ingredients; set aside. Heal oil in 8-10 inch cast iron skillet; pour in half the batter. Sprinkle with half the cheese; pour remaininng batter over top. Sprinkle with remaining cheese. Bake at 400 degrees for 30 minutes
