Field Pea Salsa

Try this flavorful salsa over pan-fried pork chops or chicken.

Ingredients

  • 2 cups frozen field peas, cooked, and drained
  • 1 cup fresh or frozen corn kernels
  • 1/2 large purple onion, finely chopped
  • 1/2 red bell pepper, finely chopped
  • 2 tablespoons chopped fresh cilantro
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 1/4 teaspoon salt

Preparation

Stir together all ingredients; chill 1 hour.
