I had left over lobster and was looking for a recipe to use it when I found this. It was perfect since I had everything on hand except the shrimp but I had Scallops which I used instead. DELICIOUS!!! I made it exactly as stated but next time I think I would add a little more arugula. I served it to guests with a tomato/feta salad, bread and frozen key lime pie for dessert. GREAT summer recipe. I made this for Christmas eve dinner this year, and my family loved it. The white wine & shallot sauce was very nice, and went perfectly with champagne! I will definitely make this again. Also, as a bonus because I had the time, I now have a container of shrimp stock and a container of lobster stock in the freezer made from all of the shells ...
