1/4 cup marinated green olives, pitted and torn into pieces
1 (14-ounce) package coleslaw mix
1/2 fennel bulb, thinly sliced
1/4 medium red onion, thinly sliced
1 orange, peeled and segmented
1 tablespoon chopped parsley
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
Preparation
In a large bowl, combine olives, coleslaw mix, fennel, red onion, orange segments, and parsley. Toss with olive oil and lemon juice. Season with salt and pepper; toss well.
