Ingredients
- 1 cup(s) cherry tomatoes
- 1/2 cup(s) chickpeas
- 1 cup(s) cucumber
- 1 tablespoon(s) fresh mint
- 1/4 cup(s) fresh parsley
- 1/2 cup(s) green pepper
- 1/2 cup(s) red pepper
- 1 whole(s) scallion
- 1 whole(s) whole wheat pita
Preparation
- dice vegatables and halve tomatoes, chop herbs, rinse and drain chickpeas. Combine. Dress with red wine vinegar and olive oil. Season. Toast pita and break into small pieces; toss into salad and serve
