  • 1 cup(s) cherry tomatoes
  • 1/2 cup(s) chickpeas
  • 1 cup(s) cucumber
  • 1 tablespoon(s) fresh mint
  • 1/4 cup(s) fresh parsley
  • 1/2 cup(s) green pepper
  • 1/2 cup(s) red pepper
  • 1 whole(s) scallion
  • 1 whole(s) whole wheat pita


  1. dice vegatables and halve tomatoes, chop herbs, rinse and drain chickpeas. Combine. Dress with red wine vinegar and olive oil. Season. Toast pita and break into small pieces; toss into salad and serve
