Farmhouse Strata
This layered casserole has a little less bread than a traditional strata. We used whole wheat bread, which increased the fiber content and decreased the carbo rating.

Ingredients
- 8 ounces turkey Italian sausage
- 2 cups egg substitute
- 1 cup fat-free milk
- 1/2 cup (2 ounces) shredded reduced-fat Cheddar cheese
- 1/2 teaspoon dry mustard
- 1/4 teaspoon dried rubbed sage
- Dash of salt
- Dash of ground red pepper
- 1/4 cup chopped green onions
- 6 (1-ounce) slices whole wheat bread, cut into 1/2-inch cubes
- Cooking spray
Preparation
- 1. Cook sausage in a nonstick skillet over medium-high heat until browned, stirring to crumble.
- 2. Combine egg substitute and next 6 ingredients in a medium bowl; stir well with a whisk. Stir in sausage, green onions, and bread cubes. Pour mixture into an 11 x 7-inch baking dish coated with cooking spray; cover and chill at least 8 hours.
- 3. Preheat oven to 350°.
- 4. Bake, uncovered, at 350° for 45 minutes or until set and lightly browned. Cut into 6 squares.
