Farmhouse Strata

This layered casserole has a little less bread than a traditional strata. We used whole wheat bread, which increased the fiber content and decreased the carbo rating.

  • 8 ounces turkey Italian sausage
  • 2 cups egg substitute
  • 1 cup fat-free milk
  • 1/2 cup (2 ounces) shredded reduced-fat Cheddar cheese
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon dried rubbed sage
  • Dash of salt
  • Dash of ground red pepper
  • 1/4 cup chopped green onions
  • 6 (1-ounce) slices whole wheat bread, cut into 1/2-inch cubes
  • Cooking spray


  1. 1. Cook sausage in a nonstick skillet over medium-high heat until browned, stirring to crumble.
  2. 2. Combine egg substitute and next 6 ingredients in a medium bowl; stir well with a whisk. Stir in sausage, green onions, and bread cubes. Pour mixture into an 11 x 7-inch baking dish coated with cooking spray; cover and chill at least 8 hours.
  3. 3. Preheat oven to 350°.
  4. 4. Bake, uncovered, at 350° for 45 minutes or until set and lightly browned. Cut into 6 squares.
