This layered casserole has a little less bread than a traditional strata. We used whole wheat bread, which increased the fiber content and decreased the carbo rating.

How to Make It

Step 1

Cook sausage in a nonstick skillet over medium-high heat until browned, stirring to crumble.

Step 2

Combine egg substitute and next 6 ingredients in a medium bowl; stir well with a whisk. Stir in sausage, green onions, and bread cubes. Pour mixture into an 11 x 7-inch baking dish coated with cooking spray; cover and chill at least 8 hours.

Step 3

Preheat oven to 350°.

Step 4

Bake, uncovered, at 350° for 45 minutes or until set and lightly browned. Cut into 6 squares.
