Excelsior House Orange Blossom Muffins

Yield about 1 dozen

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1 egg, beaten
  • 1/2 cup orange juice
  • 1/2 cup orange marmalade
  • 2 tablespoons vegetable oil
  • 1/2 cup chopped pecans

How to Make It

  1. Combine dry ingredients; make a well in center of mixture. Add egg, orange juice, marmalade, and oil; stir just until dry ingredients are moistened. Fold in pecans.

  2. Spoon batter into greased muffin pans, filling two-thirds full. Bake at 400° for 15 minutes or until lightly browned.
