Enchilada con Queso Chowder

Ingredients

  • 1 box Sheila's Select Enchilada con Queso Soup Mix
  • 8 cups Water
  • 3 Boneless Chicken Breasts, raw
  • 1 can Chopped Green Chiles, undrained
  • 1 can MexiCorn, drained
  • 1 can Black Beans, drained
  • 1 can Chicken Broth
  • 1/2 cup Rice, yellow or white
  • 1/2 cup Seasoning Blend(onions, red/green peppers)
  • Combine all ingredients in large crock pot EXCEPT soup mix. Season to taste with salt & pepper. Cover & cook on high for 3 hours. After 3 hours, whisk in soup mix, season to taste with chili powder, reduce to low setting, cover & cook 1 hour. If too thick, dilute with water or skim milk to desired thickness.
  • Serve with tortilla chips, shredded cheese & sour cream
