Eggplant with Spinach-Yogurt Sauce (Hariyali Kadhi)

    Worthy of a Special Occasion

    A bit of work, but a very good vegetarian meal. I made as directed but used 2% greek yogurt instead of whole. It was very rich and satisfying and I would make it that way again.
