Eggplant stew with Chickpeas

- 1 large eggplant, cubed
- 3 chopped carrots
- 1 bunch chopped basil
- 1 can marinara sauce
- 1 teaspoon crushed red pepper
- 2 cubed russet potatoes
- shredded italian cheese or cubed feta
- Place everything in a large casserole, mixing well. Cover and bake at 350 for 45 minutes.
