Ingredients

  • 1 large eggplant, cubed
  • 3 chopped carrots
  • 1 bunch chopped basil
  • 1 can marinara sauce
  • 1 teaspoon crushed red pepper
  • OPTIONAL:
  • 2 cubed russet potatoes
  • shredded italian cheese or cubed feta

Preparation

  1. Place everything in a large casserole, mixing well. Cover and bake at 350 for 45 minutes.
