Delicious. Give up the classic age old version of egg salad. It doesn't even begin to compare. Everyone in my family loved it and you can adjust how much sriacha you use depending how spicy you like it. Agreed, it would make a great salad also.

Love this recipe! Definitely add more bacon and sriacha, and I use watercress instead of arugula. :)

We really enjoyed this as a casual weekend brunch. I recommend toasting the bread and adding just a bit more salt, pepper, and Sriracha. I also see this as making a great finger food -- open-faced mini sandwiches on cocktail bread. Great with a side of fresh fruit.

This is good and the family loved it. I used romaine lettuce as that is what I had on hand. Can serve with baked french fries or fruit as a side.

I loved this egg salad! I agree with the reviewer who said you could just add this to arugula and have a salad but I loved the combination of flavors. I would definitely make this again!

Good sandwich, I would add more bacon and Sriracha (because I love those things). Also, I think you could get rid of the bread altogether (adding more arugula), and have a hearty salad.
