  • 2 tablespoon(s) cooked and drained spinach
  • 1 tablespoon(s) cream cheese
  • 2 crusty bread rolls
  • 2 large eggs
  • 1 tablespoon(s) Parmesan cheese


  1. Preheat oven to 350 degrees. Slice the top off each roll, scrape out some of the inside. Spread the inside of each roll with cream cheese, and top with spinach. Crack an egg into each roll, and sprinkle it with Parmesan. Bake until the egg is set, about 20 minutes.
