- 3 SM. CANS (4 OZ. EACH)
- WHOLE GREEN CHILIES,
- SEEDED & DRAINED
- 2 C. GRATED CHEDDAR CHEESE
- 2 C. GRATED MONTEREY JACK
- 8 EGGS
- 1 (12 OZ) CAN EVAPORATED
- MILK
- 4 TBSP. FLOUR
- PINCH SALT
- 1 (8 OZ) CAN TOMATO SAUCE
Preparation
- BUTTER AN 8" SQUARE PAN.
- MIX EGGS & EVAPORATED MILK WITH FLOUR & SALT.
- LAYER CHILIES WITH THE CHEESES & TOP EACH LAYER WITH THE EGG MIXTURE. BAKE AT 350 FOR 30 MIN. TOP WITH TOMATO SAUCE WITH 5 MIN LEFT ON TIMER.
- p.s. I don't always use the tomato sauce.
