Ingredients

  • 3 SM. CANS (4 OZ. EACH)
  • WHOLE GREEN CHILIES,
  • SEEDED & DRAINED
  • 2 C. GRATED CHEDDAR CHEESE
  • 2 C. GRATED MONTEREY JACK
  • 8 EGGS
  • 1 (12 OZ) CAN EVAPORATED
  • MILK
  • 4 TBSP. FLOUR
  • PINCH SALT
  • 1 (8 OZ) CAN TOMATO SAUCE

Preparation

  1. BUTTER AN 8" SQUARE PAN.
  2. MIX EGGS & EVAPORATED MILK WITH FLOUR & SALT.
  3. LAYER CHILIES WITH THE CHEESES & TOP EACH LAYER WITH THE EGG MIXTURE. BAKE AT 350 FOR 30 MIN. TOP WITH TOMATO SAUCE WITH 5 MIN LEFT ON TIMER.

  4. p.s. I don't always use the tomato sauce.
