Really delicious and SO easy to make. While the quinoa was cooking, I soaked some tofu in the sauce and then cooked that too. I sauteed the mushrooms and peppers and ate the dish hot immediately after it was ready. One idea would be to add a bit of chopped walnuts for crunch.
