Edamame Fried Rice
This recipe goes with Teriyaki Salmon with Green Tea Butter Sauce
Yield: Makes 5 1/2 cups
Ingredients
- 2 tablespoons peanut oil
- 1 large shallot, thinly sliced
- 1 large egg, beaten
- 4 cups hot cooked jasmine rice
- 1/2 cup edamame (fresh soybeans)
- 1 carrot, shredded (about 1/2 cup)
- 2 green onions, chopped (about 1/4 cup)
- 2 tablespoons soy sauce
- 2 tablespoons dark sesame oil
Preparation
- Heat peanut oil in a wok or large skillet over medium-high heat. Add shallot and egg; cook 1 minute or until egg is set, stirring constantly. Add rice and next 3 ingredients; cook 1 minute, stirring constantly. Add soy sauce and sesame oil; cook 1 minute, stirring constantly.
