Other than the green beans, you probaby already have all the ingredients needed to make this easy and flavorful summer side.
1 qt. water
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon sugar
1 pound fresh green beans
1/2 tablespoon olive oil
1/2 tablespoon fresh lemon juice
Additional olive oil and fresh lemon juice (optional)
How to Make It
Bring water, salt, pepper, and sugar to a boil in a medium saucepan over medium-high heat. Add green beans; cover and reduce heat to medium. Cook 10 minutes or to desired degree of doneness. Drain beans, and drizzle with 1/2 Tbsp. olive oil and 1/2 Tbsp. fresh lemon juice. Add more olive oil and lemon juice, if desired.
I thought this was a very tasty, easy recipe to make. I followed the recipe exactly using only half of the lemon juice. I paired this with a steak and salad. I will be making this all summer with our home grown green beans.
I don't understand the first reviewer giving it 1 star. Maybe she used too much lemon juice? The green beans cook to a great texture and the flavor is light, allowing you to actually taste the fresh green beans. This is a go to recipe with our homegrown crop.
I love lemon and I love green beans so had high hopes for this recipe but this combo of flavors just doesn't work. I'll stick with Citrus Green Beans with Pine Nuts or Garlic and Thyme Green Beans, both easy and fantastic. Won't make this again.
