Easy Pulled Pork Sandwiches

You won't believe how simple this barbecue is to prepare. These pulled pork sandwiches are perfect for a football Saturday, an outdoor get-together, or a weeknight dinner.

Ingredients

  • 1 (1-pound) pork tenderloin, trimmed and cut into 4 pieces
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 1/4 cup barbecue sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 6 (1.6-ounce) light wheat hamburger buns, toasted

Preparation

  1. 1. Combine first 7 ingredients in a medium saucepan over medium-high heat; bring to a boil. Cover, reduce heat, and simmer 55 minutes. Remove from heat. Remove pork from sauce; shred pork. Return pork to sauce.
  2. 2. Place about 1/3 cup pork mixture on bottom half of each bun; top with top halves of buns.
