Ingredients

  • 3 qts. (6 oz.) lightly packed mixed greens
  • 1 cup flat-leaf parsley leaves
  • 1/2 cup fresh tarragon leaves
  • 1 tablespoon minced shallot
  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons sherry vinegar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper

Preparation

  1. Put greens and herbs in a large salad bowl. Whisk together remaining ingredients in a small bowl, add to greens, and toss to mix.
