You can also peel and coarsely chop the apples, if you prefer. For more tender apples, decrease the heat to 400° and bake 5 to 10 minutes longer.

Ingredients

  • 1 Granny Smith apple, halved and cored
  • 1 Gala apple, halved and cored
  • 1/4 cup packed brown sugar
  • 4 1/2 teaspoons butter, melted
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Dash of ground nutmeg
  • 8 small prepared oatmeal cookies, crumbled

Preparation

  1. 1. Preheat oven to 425°.
  2. 2. Cut apples into thin slices using a mandoline or a sharp knife. Place apples, brown sugar, butter, lemon juice, vanilla, cinnamon, and nutmeg in a large bowl; toss to coat. Divide apple mixture evenly among 4 (6-ounce) ramekins, arranging apple slices in a fan shape. Sprinkle each ramekin evenly with crumbled oatmeal cookies. Bake at 425° for 9 minutes or until the apples are crisp-tender.
