Easy Grilled Chicken Salad

    Good, solid chicken salad recipe. A nice blend of textures and flavors. I used slivered toasted almonds since i had no pecans on hand. I also added some lemon zest to the dressing for added citrus flavor. A delicious, quick meal for lunch or dinner.

    I am a sucker for chicken salad, and this has to be my new favorite since it is so health conscious! I liked the fact you cook your own chicken and can adjust the seasonings. The pecans and cranberries are so good! I served this over spinach and added about 1/4 cup slice red onions (it shows it in the picture, but doesn't mention it-- but it does gel with the meal). I am going to make this again,but try it on some nice toasted whole wheat bread with a romaine leaf. Quite honestly, this is better than some of the ones you get a sandwich stores!

    I loved this recipe! Very easy to prepare on a busy weeknight. Several changes I made: I left out the celery, as I don't like raw celery. I sliced and diced a Granny Smith apple and threw it in. then, I was out of pecans and used chopped walnuts instead. I served it over fresh baby spinach added to mixed baby greens. My husband liked this very much too.
