How to Make It

Total: 40 minutes

Spray large skillet evenly with cooking spray; heat over medium-high heat for 1 minute. Add chicken and cook 5 minutes, or until lightly browned. Stir in tomatoes with their liquid, broth, rice, salt and pepper. Bring to a boil, then reduce heat to low. Cover; simmer 10 minutes.

Stir in zucchini and basil. Cover; cook 15 minutes or until rice is tender. Remove from heat. Blend in cheese and serve.
