Easy-as-Pie Apples

Yield 4 servings (serving size: 1/6 of recipe)
A delicious take on baked apples. Serve warm with a scoop of vanilla ice cream or frozen yogurt.


  • 1 cup apple cider or juice
  • 4 large baking apples (like Rome Beauty, Cortland, or McIntosh), pared, cored, and sliced
  • 1/2 cup golden raisins
  • 1/4 teaspoon vanilla extract
  • A large pinch ground cinnamon or nutmeg

How to Make It

  1. In a large nonstick skillet, heat the cider over medium-high heat until warmed through. Stir in the apples, raisins, vanilla, and cinnamon and cook, occasionally stirring gently, until apples are soft and most of the liquid has evaporated, about 8 to 10 minutes. Serve warm.
